Pumpkin Muffins

I love baking and had a can of pumpkin sitting around so thought it would be the perfect excuse to experiment in the kitchen.  The texture of these muffins came out perfect!! Literally feels like silk in your mouth, no joke.  They are macro friendly and good to eat for breakfast or dessert!

Recipe:
Yield: 6 muffins

Ingredients:
1/2 cp (122g) pumpkin pure
one scoop (39g) chocolate whey protein (vanilla would work too, this is just the flavor I have right now)
1/4 cp (56g) egg whites
2 servings (78g) spice cake mix
1 ts baking powder

Methods:
Mix all ingredients together and bake at 350 degrees for 15 minutes.  Let cool and enjoy!
