Who doesn’t love eating raw cookie dough?? SO DELICIOUS! While I would love to eat raw cookie dough all day, every day it wouldn’t be the most nutritious idea. That is what inspired me to make these healthy cookie dough bites! Each bite has 69 calories, 10g of carbs, 2g of fiber, 5g of protein and 1g of fat :). Yes I used chickpeas in the recipe….but fear not! I PROMISE you cannot taste them at all. Some of you may notice that these do not have chocolate chips in them…..that is because I ran out and was too lazy to go to the store. Feel free to add in chocolate chips or whatever toppings you want! It will change the nutrition but either way it’s still healthier than regular dough 🙂 Enjoy!
- 1 cup drained chickpeas
- 1 cup old fashioned oats
- 5 packets Splenda
- 1/4 cup sugar free pancake syrup
- 2 tb water
- 1 scoop (39g) chocolate whey protein (any flavor should be fine)
Put everything except the syrup into a food processor and mix together. Then add syrup and continue mixing. Roll into balls and refrigerate (I would actually try refrigerating the dough first because when I made the balls first it was messy in my hands). The recipe should make ten 1″ size bites.
