Pumpkin Protein Cake

Raise your hand if you have ever wanted to eat an entire cake at once…..okay maybe that was only me today haha. Anyways, tis the season of pumpkin baking! Here is a recipe for pumpkin protein cake and it only uses four ingredients! I baked mine in a mini 6″ cake pan but you could also make muffins with this recipe.  I cut mine in half and put a layer of greek yogurt in between but you could def make some frosting too! I was just lazy and had no frosting ingredients haha.


  • 2 egg whites
  • 2 scoops (78g) chocolate whey protein (any flavor should be okay as long as it goes well with pumpkin)
  • 1/2 cp (122g) pumpkin pure
  • 2 servings (78g) dry spice cake mix (I used Duncan Hines)
  • 3 packets Splenda
  • water til consistency


  • mix everything together and bake in either muffin tins or a mini cake pan (ramekins would probably be okay too) at 350F for 20ish minutes (I honestly didn’t time it but this is what I would guess).

Macros for 1/4 of recipe: 176 cals  22C/15.5P/3F
