Pumpkin Protein Mugcake

I finally made a successful mugcake!!!!! In the past they have always come out super dry, rubbery or exploded in the microwave…but finally this worked!! And the best part is that it is only 3 ingredients (4 if you count baking powder…). Enjoy!

Ingredients:

  • 1/4 cup (60g) pumpkin pure
  • 1 egg white
  • 1 scoop (28g) Try About Time brand birthday cake flavored whey
  • 1 ts baking powder
  • 1 packet splenda

Method:

Mix everything together, spray a mug with cooking spray, dump mixed ingredients into the mug and microwave for about 55 seconds. Ta Da!!
