Happy Monday!! Bought coconut flour the other day so here is my first pancake recipe using coconut flour and no whey! If you have never used coconut flour, the texture is definitely different from regular pancakes…but super good! It is very soft but not completely smooth…has a little bit of grittiness but that’s not a bad thing. Still pillow soft 🙂 Also it requires a lot more liquid in the batter and I would recommend cooking on low heat.
- 2 TB (14g) coconut flour
- 1 serving (52g) The Lion’s Choice banana monkey bread pancake mix
- 2 servings (92g) liquid egg whites
- 1 ts baking powder
- 1.5 tb (22g) mini reeses pieces
- 1/8 cup (30g) unsweetened applesauce
- water until desired consistency
Mix together the dry ingredients. Add in the egg whites. Slowly add water until desired consistency. Let batter rest for 10 minutes. Prepare pancakes over low/medium heat and drop mini reeses on top before flipping them. ENJOY 🙂 I topped mine with macadamia nut powdered peanut butter from The Lion’s Choice and sugar free pancake syrup.
