Chocolate Chip Protein Pancakes (using coconut flour)

INGREDIENTS:

  • 2 tb coconut flour (14g)
  • 2/3 scoop Cellucor cinnamon whey (22g) (“eatandrepeat” for 25% off)
  • 1/2 serving (26g) Hungry Jack light and fluffy pancake mix
  • 46g liquid egg whites
  • 1 ts baking powder
  • 1/4 cup (56g) plain non-fat greek yogurt
  • water until desired consistency
  • mini chocolate chips

METHODS:

Mix together dry ingredients. Add egg whites and yogurt. Stir everything together and slowly add water until desired consistency. Turn on pancake griddle to low/medium heat and prepare pancakes. I like to put the chocolate chips on top before flipping rather than mixing them in before so that the distribution is more even 🙂14856091_10155454323772195_3514934482460878244_o
